- A forged knife can include up to 40 total manufacturing steps and is expensive. However, the balance and weight of a forged knife is far more comfortable, in particular if you're doing alot of cutting.

- Ceramic is a harder material that can hold a fine edge longer and cannot roll. It can fracture where metal will not, so it's not the knife for boning a chicken but GREAT for fruits and vegetables!
